Abstract

Garlic (Allium sativum L.), is an annual horticultural plant. It belongs taxonomically to the Alliaceae family. It is the second most used species of the Allium genus in the world, after the onion.

This vegetable represents a commercial crop of economic importance. The bulb is valued as a condiment. Its aromatic and organoleptic characteristics are due to its sulfur components. It also has medicinal properties.
