Abstract

Legumes play a role essential in agriculture and food, both human and animal. These high-value species nutritional, mainly source of
proteins and bioactive compounds (fiber, carbohydrates, calcium,
iron, vitamin B1 and folic acid) contribute to disease prevention;
also, they are improvers of soils for their direct contribution of nitrogen, product of the association with nitrifying bacteria
(Rhizobium) or the incorporation of agroecological practices, such as residues of harvest, association and rotation of crops. legumes
of edible grain, in addition to its direct consumption have potential
for agro-industrial use, in the food processing (flour, breads, pastas and cookies) and formulations for animals. this item has a high social and environmental impact in farming communities.
