Abstract

Stevia, Stevia rebaudiana Bertoni, is a semi-perennial herbaceous plant, which reaches 30-120 centimeters in height, native to Paraguay. The Guarani indigenous people used it since pre-Columbian times to sweeten their food and drinks. This plant is cultivated throughout the Asian continent, in America in countries such as Paraguay, Brazil, Colombia, Argentina, Bolivia and for a few years in Venezuela.
