Abstract

The Chinese tamarind, Averrhoa carambola L., belongs to the Oxalidaceae family and is known as carambola. It is a fruit native to Indonesia and Malaysia. Its cultivation has spread to other tropical countries in Asia and America. The main producing countries today are Thailand, Brazil, Colombia and Bolivia. Carambola is used as a fresh fruit; However, it is also processed into pickles, sauces, wine and jellies, although on a limited scale.
