Abstract

The bean Phaseolus vulgaris L. is the most consumed grain legume worldwide. Venezuela is no exception, being a large consumer country of black beans, a basic ingredient of “Pabellón”, a traditional Venezuelan dish. The preference for black grains is associated with cultural aspects of the population, especially rural communities, and they are the basis of peasant nutrition, although their consumption is widespread in all regions of the country.
